VALENTINE’S RECIPE: STAINED GLASS COOKIES: TWO WAYS

This year for Valentine’s Day I decided to make these beautiful cookies.


I made two different ways, so you can choose or combine them as you wished.
I personally think that the triple rattle-like ones are cute but a little bit complicated to eat. But they are great option as a gift.

Ingredients:

140 g butter at room temperature (4.9 oz.)
120 g white sugar (4.2 oz.) (I used coconut sugar)
1 egg
1 teaspoon of vanilla extract
280 g flour (9.9 oz.)


Way I (simple cookies)
Candy:

1 cup of granulated sugar
1/2 of water
3 tablespoons of corn syrup
Pink coloring (gel or paste)



Way I (filled triple cookies)
Candy:

2/3 cup of granulated sugar
1/3 of water
2 tablespoons of corn syrup
Pink coloring (gel or paste)

Filling of your choice
Heart sprinkles


Sift the flour and reserve.
Beat the butter and the sugar until it’s creamy. 
Add the egg and the vanilla and mix. 
Add the flour and mix. 

Knead slightly and divide the dough into two parts. Cover them with cling film and put them in the fridge. 

After this time, preheat the oven at 180ºC (356ºF).

Extend the dough, 0,5 cm (0,2 inches) of thickness, and cut in circular shape.
Cut a heart in the middle of half of the cookies.

Place the cookies on a baking sheet and bake them for 10 minutes.

When they’re ready let them rest for 5 minutes and put them in a rack to cool down.

Meanwhile, prepare the candy (you need to have the cookies ready because the candy solidifies quickly).
Put the sugar, the water and the corn syrup in a small pot and cook it at medium-high heat. If you’ve got a thermometer, it will be ready when the temperature reaches 150ºC  (300ºF). Mine didn’t work, so there’s another way, you can get a drop and it must solidify almost immediately. When it’s already boiling add the coloring (just a little bit for the triple ones)

And now, I’m going to explain each way.

Way I
This one is the easiest, you’ll only need to place the cookies on a baking sheet, pour the melted candy inside of the hearts in all the cookies and let it solidify.

Way II
This way it isn’t difficult, just takes more time but the result looks amazing.
You must follow the steps in the photo:
1. Add the melted candy inside of the hearts only on 2/3 of the cookies y let it solidify.
2. Place the cookie upside-down.
3. Spread the chosen filling.
4. Place a cookie without candy.
5. Spread the filling again and put some sprinkles.
6. Place another cookie with candy.


Now you’ve got your beautiful stained glass cookies!
