STRAWBERRY GAZPACHO

So just in case you don’t know, gazpacho is a cold tomato soup or cream and in Spain is very usual to make it in the summer.

At home, we like it so much, but is my mother who prepares it.

So the other day I was thinking what to make for dinner and I thought of this strawberry gazpacho.

Strawberries match really well with the rest of ingredients and it tastes like gazpacho but also like strawberries, is quite interesting.


Ingredients (4 servings):
175 g of tomato, peeled and chopped (6.2 oz.)
175 g of strawberries cleaned and without leaves (6.2 oz.)
A little piece of red pepper
A thin slice of bread soaked in water
Vinegar, oil and salt to taste


Place all the ingredients in the blender and blend until it’s liquid, but not creamy.

I served them in shot glasses decorated with chives, but you can also serve it with fried bread, ham…
