SPICED PEAR SPONGE CAKE

Happy New Year!


I haven’t disappeared!
I had finals (as usual) and then I really needed a rest.
Put today I suggest this delicious spiced pear sponge.



It’s so fluffy and aromatic, and perfect to take with a tea or a coffee.



Ingredients:
2 pears
3 medium eggs
140 g of brown sugar (5 oz.)
250 g of flour (8.8 oz.)
2 teaspoons of baking powder
½ teaspoon of ground cardamom 
½ teaspoon of ground cinnamon 
½ teaspoon of ground nutmeg 
A pinch of salt
120 ml of sunflower oil
¼ cup of chocolate chips

Preheat the oven at 175ºC (345ºF).

Peel and chop 1 pear and ¾, reserve.
Cut the rest of the pear into thin slices.
Mix the flour, the salt, the spices and the baking powder, shift and reserve.

Beat the eggs with the sugar.
Add half of the dry ingredients and mix.
Pour the oil and mix.
Add the rest of dry ingredients.
Finally, add the pear and the chocolate chips.
Put the batter in a mold, previously greased with butter.
Put the slices of pear on the top of the batter.

Bake it for 40-50 minutes, until a tooth stick comes out clean.

Leave it rest for 5 minutes in the mold, remove it from the mold and let it cool down on a rack.

You can serve it with a hot chocolate or vanilla sauce.
