RYE BREAD AND "BREAKFAST AT WINTERFELL"

The recipe of this bread is from the book “A feast of ice and fire”, which is a recipe book based on Game of Thrones.

The bread is really easy, and the taste and the texture are wonderful.
I used it for a “breakfast at Winterfell” that is at the end of the post.

I hope you like it as much as I did.

Ingredients:
2 and ¼ of teaspoon of dry yeast
33 centiliters of dark beer
2 tablespoons of honey
1 beaten egg
270 g of strong wheat flour (9.5 oz.)
200 g of whole-meal rye flour (7 oz.)
50 g of whole-meal wheat flour (1.8 oz.)

Mix the beer, the yeast and the honey and leave it until it’s foamy (about 5 minutes)
Add the egg and mix it.
Add the flour little by little until it gets homogeneous.
Take the dough, put it on a surface with flour and knead for 5 minutes.
Make a ball and let it rest for 1 hour, covered with a towel.
Punch the dough and let it rise for 2 more hours.
Form two loafs and bake at 230ºC (4501ºF) for 25 minutes.

Let it cool on a rack for at least 15 minutes before serving it.
