PRIDE COOKIES

It’s been a while since I last post, but it was impossible.




After the 6 worst months of a life, I’m finally a pharmacist!
Here you have a couple of photos from my graduation.





I also wanted to show you these red velvet cupcakes that I made for the girls in the drugstore.



I now, as the World Pride is in Madrid this year, I’ve prepared these pride cookies.



You can also use this technique for other cookies.

Ingredients:
140 g butter at room temperature (4.9 oz.)
120 g white sugar (4.2 oz.)
1 egg
1 teaspoon of vanilla extract
280 g flour (9.9 oz.)
Edible paste coloring (red, orange, yellow, green, blue and purple)

Sift the flour and reserve.

Beat the butter and the sugar until it’s creamy. 

Next add the egg and the vanilla and mix. 

Add the flour.

Weigh the dough and divide into 6 parts.

Dye each part of the dough, make a ball, cover them with cling film and put them in the fridge for 30 minutes.




Cut a rectangle of baking paper of 9x15 cm (3.5x6 in)

Extend the purple dough, 0.5 cm (0.2 inches) of thickness using the rectangle.
Repeat with each color.



Stack the layers up.



Refrigerate for 30 minutes.

After this time, preheat the oven at 180ºC (356ºF).

Using the rectangle, cut the edges.



Make a cut in the middle.




Cut the cookies carefully, 1 cm (0.4 inches) of thickness.



Place the cookies on a baking sheet and bake them for 20 minutes.

When they’re ready let them rest for 5 minutes and put them in a rack to cool down.
