PEACH SPONGE CAKE

Today’s recipe is a delicious and easy sponge cake to use the peaches that are now in the perfect time.

Ingredients:
3 M eggs
140 g of brown sugar (5 oz.)
250 g of flour (8.8 oz.)
2 teaspoons of baking powder
A pinch of salt
1 teaspoon of vanilla extract
120 ml of sunflower oil
2 peaches + ½ of peach

Preheat the oven at 175ºC (345ºF).

Peel and blend the 2 peaches, reserve.
Cut the rest of the peach into thin slices.

Mix the flour, the salt and the baking powder, shift and reserve.
Beat the eggs with the sugar.
Add half of the dry ingredients and mix.
Pour the oil and mix.
Add the rest of dry ingredients.
Finally, add the peach.
Put the dough in a mold, previously greased with butter.
Put the slices of peach on the top of the batter.
Bake it for 40-50 minutes, until a tooth stick comes out clean.
Leave it rest for 5 minutes in the mold, remove it from the mold and let it cool down on a rack.
