SANDWICH HEART COOKIES

Right now I’m so stressed with my studies but I managed to prepare a little treat for Valentine’s Day.



It’s very quickly so I hope you try it even if you don’t celebrate it, because they are delicious.




Ingredients:
140 g butter at room temperature (4.9 oz.)
120 g white sugar (4.2 oz.)
1 egg
1 teaspoon of vanilla extract
280 g flour (9.9 oz.)
1 teaspoon of baking powder
2 tablespoons of milk
Optional: food colorant

Filling: nutella, jam, peanut butter…


Start sifting the flour with the baking powder and reserve.
Beat the butter and the sugar until it’s creamy.
Next add the egg and the vanilla and mix.
Add half of the dry ingredients and mix.
Now add the milk.
Add the rest of dry ingredients.
If you want to add the colorant do it now.

Knead slightly and divide the dough into two parts. Cover them with cling film and put them in the fridge.



After this time, preheat the oven at 180ºC (356ºF).

Extend the dough, 0,5 cm (0,2 inches) of thickness, and cut in circular shape.

Cut a heart in the middle of half of the cookies.



Place the cookies on a baking sheet and bake them for 10 minutes.

When they’re ready let them rest for 5 minutes and put them in a rack to cool down.

When they are cool take one cookie without heart and spread the filling. Place the one with the heart.
