FRENCH APPLE TART

Since I came back to University it seems impossible to find time for anything, suddenly the day is over and I realize I haven’t written the recipe again. But I finally managed to finish it. This apple tart is quite quick and very very nice.


Ingredients:
1 sheet of puff pastry (homemade or prepared)
1 apple o 1 and a half, depending on the size of the puff pastry

For the pastry cream:
230 ml milk
1 tablespoon of corn flour
4 tablespoons of sugar
2 egg yolks
1 teaspoon of vanilla extract

For the syrup:
½ cup of the water from boiling the apples
3 tablespoons of sugar




Preheat oven at 200ºC (392ºF).

Core the apples and cut them into quarters. Boil them for 10 minutes.

Meanwhile, poke a fork into the sheet of pastry several times and bake it for 5 minutes.



Drain the apples and while they get cool prepare the pastry cream (remember to save half of a cup of the water)

Mix, in different bowls, 180 ml of milk with two tablespoons of sugar and the vanilla, 50 ml of milk with all the corn flour and finally the yolks with the other to tablespoons of sugar. Mix everything in a pot and cooking over medium heat, keep stirring it until it gets dense. Remove from the heat and let it cool.

Now prepare the syrup. Cook over slow heat the water with the sugar until it gets a bit dense.

Cut the apples into thin layers.


Lastly, assemble the tart: pour the pastry cream over the sheet of puff pastry, place the apple and pour the syrup.


Bake it for 15 minutes and let it cool in a rack.
