DULCE DE LECHE CUPCAKES

I prepared these cupcakes as a surprise for my cousin.


She loves dulce de leche, so I thought it was a great idea.




But I warn you, they’re a caloric bomb, eat them moderately!



Ingredients (15 cupcakes):
Cake:
110 g of butter at room temperature (3.9 oz.)
2 M eggs
175 g of brown sugar (6.2 oz.)
220 g of flour (7.8 oz.)
2 teaspoons of baking powder
85 ml of milk + 1 tablespoon of lemon juice
1 teaspoon of vanilla extract

Cheese frosting:

100 g of butter at room temperature (3.5 oz.)
75 g of cream cheese (chilled) (2.6 oz.)
185 g of icing sugar (6.5 oz.)
1 teaspoon of vanilla extract

Dulce de leche
1 tablespoon of ground nuts

Preheat the oven at 175ºC (345ºF).

Prepare the paper liners in the mold.

Mix the flour and the baking powder, shift and reserve.
Beat the butter with the sugar.
Add the eggs and the vanilla
Add half of the dry ingredients and mix.
Pour the milk and mix.
Add the rest of dry ingredients.

Distribute the batter into the paper liners and bake for 15-20 minutes, until a tooth stick comes out clean.

Leave them for 5 minutes in the mold, take them out from the mold and let them cool down on a rack.

Prepare the cheese frosting, put all the ingredients in the bowl and beat at high speed until it increases its volume (about 6-7 minutes).

Core the cupcakes, take out the core, put a half of a half teaspoon of dulce de leche and place the core again (follow the steps in the picture)

Put the frosting (cupcakes must be already cooled).

Pour a little bit of dulce de leche and the nuts on the top of the frosting.
