DOUGHNUTS

Well, after a week with sciatica, I’ve ended up making doughnuts, because “resting” was driving me crazy. I say “resting” because my life didn’t let me rest so much, I had to go to university, study and so on. Plus I’ve realized that I’m not a resting person, I need to do things every time, but also relax, so I don’t get sciatica or other weird stuff because of stress.



That’s why I came up with this idea; I’ve been wanting to share this recipe with you for a long time now. 

Half of them are covered with melted chocolate and the other half with blue glaze, because, you know, they are cute =)

I hope you try them, because they were really incredible!




Ingredients (for 20 regular size):
10-12 cardamom capsules
220 g all-porpoise flour (7.7 oz.)
80 g strong flour (2.8 oz.)
9 g dry yeast (0.3 oz.) (or 25 g /0.9 oz. fresh yeast)
1 teaspoon of salt
1 egg
30 g inverted sugar (1 oz.)
100 ml of milk
Orange zest
30 g butter at room temperature (1 oz.)

Sunflower oil to fry

Glaze (for the 20 donuts):
1 cup icing sugar
2 tablespoons of milk
1 teaspoon of vanilla extract
Optional: colorant




First, take away the cardamom capsules and just keep the black little balls on the inside and ground them (I used the coffee grinder).

Now mix all the dry ingredients: flours, salt, cardamom and the yeast (if you are going to use fresh yeast it’s better to dissolve it in the milk)
Make a hole in the mixture, add the egg and knead (I made it with the Kitchen Aid hook)

Then, add the warm milk with the inverted sugar and the orange zest.

Finally, add the butter little by little.

Let the bowl covered rest for 1 hour and a half.

Preheat the oven at 120ºC (250ºF) during 10 minutes and then turn it off.

After this time, knead a bit and spread the dough with a rolling. Cut the doughnuts, with approximately 1,5 cm of thickness.

Cover them and place them in the oven during 20-30 minutes.

Now, fry them in the oil, not very hot, the have to be golden but not brown.


When you take them from the oil is convenient to place them on absorbent paper, so it takes the excess of oil.

Finally, prepare the glaze, mixing all the ingredients, and cover the doughnuts with it.

And they are ready to eat them as soon as possible, because if not, before you know it, they’re going to be gone!
