CRUNCHY BREAD

A few years ago I tried “crystal bread” and I loved it, since then, I’ve been trying to find a recipe. I get really nice breads, but not what I want.
So while I find the perfect recipe, I let you with this crunchy bread recipe, perfect for creams, cheese, pâtés… I made it with homemade hummus and it was delicious.

Ingredients
250 g strong flour (8.8 oz.)
225 ml cold water
3 g dry yeast (0.1 oz.)
1 teaspoon of salt
12,6 ml olive oil

Sift the flour and add the yeast.
Add the water, little by little so it gets well absorbed (I knead with the Kitchen Aid’s hook, but you can do it by hand or with other device)
Add the salt and finally the oil. Place it in a recipient, cover it and let it rest for 1 hour
After the hour, move the ends to the middle (like in picture 3), cover it again and let it rest for 45 minutes. Repeat the process twice more

1. Before rest
2. After rest
3. After folding

Divide into the portions you’d like and let it rest for 10 minutes

Preheat the oven at 250ºC (480ºF) with a plate with water.
Bake it for 10 minutes, low the temperature to 200ºC (390ºF), remove the water and bake for 30-40.
