MINI BERRY PIES

As you should already know, although I’m not American, I like to prepare something traditional for Thanksgiving.



And as any excuse is good to make a sweet treat, here you have these berries mini pies.


They’re a little bit sour, but the combination of flavors is so nice.


Ingredients:
200 g of mixed berries (frozen or fresh) (7 oz.)
20 g apple, cored, peeled and finely chopped (0.7 oz.)
50 g of brown sugar (1.8 oz.)
A pinch of salt
Cinnamon and nutmeg to taste
20 g of pine nuts (0.7 oz.)
20 g of butter (0.7 oz.)

16 circles of short pastry (12 cm/4.7 in of diameter approx.)
1 beaten egg
Sugar for dusting 

Mix the berries, the apple, the brown sugar, the salt, the cinnamon and the nutmeg in a bowl.

Put the butter in a deep pan at medium heat and add the previous mixture.

You must cook it at medium heat for approximately half an hour, when there’s no liquid, but before it gets too dry.

Add the pine nuts.

Preheat the oven at 200ºC (392ºF).

To assemble the pies, follow the instructions on the picture:
1. Place one circle of pastry.
2. Put a tablespoon of filling
3. Place another circle of pastry.
4. With a fork, seal the borders and with a knife make four small cuts in the center.
5. Brush them with the beaten egg.
6. Dust with the sugar.


Bake for 15 minutes, or until they’re golden.
